Juyondai [十四代] - Daiginjo 'Nakatori' 中取り大吟醸 1800ml Take-suzume Herbs (dillTasting Note A limited release Daiginjo Sake, aged using the traditional futa koji method with Yamagata yeast. Futa koji involves using shallow wooden trays to cultivate the koji, a method largely replaced in modern sake production by box or machine made koji. This time honoured technique imparts a richly layered aroma and flavoured profile.
